Buffalo Chicken Quesadillas

Ingredients
  

  • 3 ounces shredded chicken
  • 2 tbsp Franks buffalo wing sauce
  • 2 Tbsp OPA blue cheese dressing Bolthouse Farms Blue Cheese is also good
  • 1/4 tsp olive oil
  • 1/2-1 tsp cilantro
  • 1 Tbsp low fat shredded cheese
  • 1 shell Mission Carb Balance tortilla yu can use any low carb, high fiber tortilla shell

Instructions
 

  • Heat skillet to medium heat. In a small bowl, toss chicken, buffalo sauce, blue cheese, cheese, cilantro and salt and pepper to taste.
  • Lightly grease pan with olive oil.
  • Place tortilla on pan, top with chicken mixture and fold in half.
  • Allow to cook for 2 minutes and flip for 2 minutes on the other side.
  • Cut the quesadilla in half and serve.
