- 4 ounces shredded chicken, cooked
- 2 each laughing cow cheese, mozzarella
- 1 tbsp Franks buffalo sauce
- 1 each english cucumber, pealed and seeded if you prefer celery, you can substitute.
Mix chicken, laughing cow cheese wedges and buffalo sauce in small bowl. Microwave for 1-2 minutes. Stir thoroughly.
Place mixture inside cucumber boat and slice to desired eating portions.

Buffalo Chicken Rolls

- 2.5 pounds boneless, skinless chicken breast
- 1/2 cup water
- 1 cup Franks buffalo wing sauce
- 6 ounces blue cheese crumbles
- 12 tbsp OPA blue cheese dressing
- 1 package cole slaw mix
- 12 each rice paper wraps
Put chicken in crockpot with 1/2 cup water and buffalo sauce. Cook on high heat for 4-6 hours or until chicken is easily shredded with a fork. Once cooked add in cole slaw mix to soften. Stir until everything is mixed well and coated.
Once chicken is cooked, preheat oven to 400 degrees.
Lay rice paper wraps in water for a few seconds. Then lay on a clean work surface, top with 3 ounces shredded chicken and 1/2 ounce blue cheese crumbles and fold.
To fold: Work quickly, you don’t want your wrapper to fall apart. When you’ve placed all of your ingredients in a nice little pile in the middle of the rice paper roll wrapper, it’s time to roll it shut!
Note: Be careful not to overfill your spring roll wrapper because it will cause the rice paper to tear.
Start by folding the top and bottom sections of the rice paper in over the mixture.
Starting on the left-hand side, stretch the left side of the wrapper around the pile of ingredients, tucking and rolling until you can rest the wrapper just under the ingredients.
Tuck the corners in and then continue to roll the rice paper roll all the way, making your roll as tight as possible without ripping the rice paper wrapper.
That's it!
Repeat remaining rolls.
Please the rolls on a coated cookie sheet and bake for 12-15 minutes or until the rolls are beginning to turn a light brown. .
Let cool for 5 minutes then serve!

Buffalo Chicken Bites

- 1 pound boneless, skinless chicken breast
- 1/4-1/2 cup Franks buffalo sauce
- 2 cloves garlic
- 1 tsp olive oil
Pre-heat oven to 450 degrees.
Trim your chicken breast or tenderloins into 1 inch cubes and cut away any fat from the chicken.
In a bowl chicken, minced garlic and oil mixing until chicken is coated.
Add chicken to a 8x8 baking dish and bake uncovered for approximately 20 minutes or until chicken is cooked all the way through.
Once the chicken is cooked, place the cooked chicken in a sprat bowl, draining any excess juice and toss in wing sauce to your liking.
Serve with fresh carrots, celery, or fat free ranch dressing. I personally like Walden Farms, OPA or Bolthouse Farms for low calorie dressing.

Heat oven to 350 degrees.
Spray cooking sheet with spay oil, like pam or coconut oil
Cut tortilla in triangles.
