Fried Cabbage with Smoked Turkey Sausage

- 2 each Hillshire farms smoked turkey sausage rope
- 1 tsp garlic
- 1 head cabbage
- 1/4 cup parsley
- 1 cup onion
- 1 tsp paprika
- 3 tbsp butter
- salt and pepper to taste
In a large skillet ove medium heat, melt 1.5 TBSP butter. Add in the onion and garlic to the pan. Sauté until onion is translucent and garlic is fragrant.
Add in sliced turkey sausage and sauté until slightly browned.
Add remaining butter, cabbage, paprika, salt and pepper. Toss to mix all ingredients together and coat the cabbage with the butter and seasonings.
Sauté until cabbage is wilted and slightly browned.
Top with fresh parsley before serving.

Salisbury Steak in Mushroom Gravy

For the Salisbury Steaks
- 2 pounds 93/7 lean ground beef
- 1 each egg
- 1/3 cup onions, chopped
- 2 TBSP Worcestershire sauce
- 1 tsp pepper
- 1 tsp parsley
For the Mushroom Onion Gravy
- 4 cups beef broth
- 3 TBSP flour
- 8 ounces mushrooms
- 2 cups onion
- 1 tsp garlic,minced
- 1 TBSP Worcestershire sauce
- 1/2 tsp salt
- 1/2 tsp pepper
For the Salisbury Steaks
In a medium mixing bowl, mix the ground beef, onions, egg, Worcestershire sauce, parsley, and pepper together. Divide into 8 equal oval shaped patties.
Heat a large frying skillet over medium high heat and cook each patty for about 4-5 minutes on each side.
Once cooked on both sides, remove from the plan and place on a side plate.
For the Mushroom Onion Gravy
Reduce heat to medium, add onions and garlic to the pan along with the steak drippings. Cook for 3-4 minutes. Stir in mushrooms and continue cooking for a few more minutes.
Sprinkle flour over the mushrooms and onions, stir and cook for another minute or so.
Next, add beef broth, Worcestershire sauce, salt and pepper. Stir for a few minutes and place the Salisbury steaks back into the pan and cover with the gravy mixture.
Cover the pan and cook for about 2-30 minutes gents stirring occasionally. The gravy will also ticket up as it cools so make sure not to cook too long or your gravy will be too thick. If that happens, just add a little more beef broth to thin out.
If the gravy is to thin mix 1 tsp corn starch with 1/8 cup water, then add to pan, stir and let simmer for a few more minutes.

Chile Verde Casserole

- 2 pounds chicken breast, cooked and shredded
- 3 TBSP taco seasoning
- 3/4 cup green salsa
- 1 can diced green chilis 4 oz can
- 16 ounces 2% low fat cottage cheese
- 5 ounces colby jack cheese, shredded
Preheat oven to 375 degrees
In a medium sized bowl, mix the taco seasoning, salsa, green chilis and cottage cheese.
Mix in the shredded chicken and mix well.
Spray your baking dish with nonstick cooking spray.
Spoon the mixture into and 9x11 baking dish.
Top the casserole with the shredded cheese.
Bake for 20 minutes or until the cheese is melted.
Garnish with green onions, if desired.
Serve with salsa or sour cream, if desired.

Taco Casserole

- 10 ounces frozen cauliflower rice
- 2-3 TBSP oil
- 2 lb ground turkey
- 1 small red bell pepper seeded and chopped
- 1 small onion
- 4 TBSP taco seasoning
- 1 can ro-tel
- 1/2 cup mexican shredded cheese
- 1/2 cup sour cream, light
Preheat over to 350 degrees.
Pan fry the cauliflower rice in oil medium/high heat until browned. Transfer to greased 2qt casserole dish and spread an even layer.
Brown the ground turkey with red pepper and onion over medium/high heat. Drain excess fat if necessary, then add taco seasoning, ro-tel and water. Stir and cook until liquid absorbs. Transfer to casserole dish in an even layer on top of the cauliflower rice.
Top with 1/2c of the shredded cheese and bake 10-15 minutes.
Spread sour cream over the top. Sprinkle with a tad more shredded cheese and preferred toppings.
Top with lettuce, tomatoes, jalapeño, or whatever toppings you prefer.

Taco Turkey Burgers

Place turkey, peppers, taco seasoning, Worcestershire sauce, and Tobasco into a mixing bowl. Mix until combined.
Form patties. Each should weight roughly 4 ounces..
Once all are formed, cook until about 165 degrees or until cooked though.

Enchilada Bake

- 4 each shredded chicken, cooked
- 2 tsp taco seasoning
- 1 cup low fat greek yogurt
- 4 ounces green chilies, chopped
- 1 can rotel diced tomatoes, drained
- 1/2 cup red enchilada sauce
- 1/2 cup cilantro
- 1/4 cup green onion, chopped
- 1/2 cup cheddar cheese, shredded
- 1/2 cup pepper jack cheese, shredded
Heat oven to 350 degrees. Spray 8 square cooking dish with non-stick spray.
Heat skillet over low heat. Add chicken, greek yogurt, green chilies, taco seasoning, rotel, and enchilada sauce, green onions and cilantro; stir to combine. Remove from heat.
Transfer chicken mixture to baking dish. Top evenly with cheeses.
Bake 10-15 minutes.
Turn oven to broil. Place baking dish about 5 inches from broiler, then broil 1-2 minutes or until cheese is golden and bubbly. Remove from broiler.
Serve and enjoy!
