Instructions
  1. Preheat oven to 350 degrees.
  2. Place a piece of foil on a cookie sheet. I used 1 per pocket made.
  3. Spray the foil with nonstick spray.
  4. Place the tortilla on the foil.
  5. Place ham in the middle of the tortilla, making sure you arrange it to it is flat, not a mound.
  6. Place the shredded cheese in the middle of the ham, then form into a ring.
  7. Working quickly, crack (one pocket at a time) crack an egg into the ring then fold the bottom and top edges in, then the left and right side to form a package. Make sure the tortilla covers the entire egg. Then wrap in the foil. DO NO TURN UPSIDE DOWN!
  8. Place on baking sheet.
  9. Bake for 25 minutes. Check to ensure the yolk is cooked by poking the pocket, you will feel the dome shape of the yolk. The base and the edges should be crispy and the top will be soft.
  10. Unwrap immediately and serve hot!
  11. To cut down on the fat, you can swap the egg for 3 TBSP egg whites or use a light cheese. If you are trying to swap the ham out for bacon keep in mind you will increase the fat in this dish.

Instructions
  1. Preheat oven to 375 degrees. Spray baking dish with non-stick cooking spray.
  2. Combine yogurt, parmesan cheese and seasonings.
  3. Spread mixture over chicken.
  4. Bake for 45 minutes, or until chicken is cooked through and topping is browned.

Instructions
  1. Heat gas or charcoal grill
  2. In a small bowl, mix taco seasoning mix, the ranch dip mix, sour cream, and 2 TBSP green onions. Stir to completely blend.
  3. Add chicken and mixture to gallon bag and marinate for at least 2 hours.
  4. Place chicken on the grill over medium heat, and cook 30-40 minutes, turning every 6-7 minutes.

Instructions
  1. *The chicken should already be cooked and shredded for this recipe.
  2. Preheat oven to 400 degrees. Wash sweet potato and prick with a fork. Place on oven rack (or buy the microwavable sweet potatoes).
  3. Let sweet potato bake. Remove when soft.
  4. Heat chicken and Franks Buffalo sauce.
  5. Place over sweet potato and top with OPA Ranch Dressing.

Instructions
  1. Preheat oven to 350 degrees.

  2. Trim fat off chicken breast and slice in half long ways.

  3. Season chicken with Italian seasoning.

  4. Place chicken on baking sheet (use the rectangle bar from pampered chef) and bake for 30 minutes or until done.

  5. Once cooked, place 2 TBSP italian diced tomatoes and 2 TBSP fat free feta on top of each one and cook 5 more minutes.

  3. Fill each compartment 3/4 full with egg whites.
  4. Next, add 1 TBSP diced ham and 1 tsp shredded cheese to each compartment.
