Salisbury Steak in Mushroom Gravy

For the Salisbury Steaks
- 2 pounds 93/7 lean ground beef
- 1 each egg
- 1/3 cup onions, chopped
- 2 TBSP Worcestershire sauce
- 1 tsp pepper
- 1 tsp parsley
For the Mushroom Onion Gravy
- 4 cups beef broth
- 3 TBSP flour
- 8 ounces mushrooms
- 2 cups onion
- 1 tsp garlic,minced
- 1 TBSP Worcestershire sauce
- 1/2 tsp salt
- 1/2 tsp pepper
For the Salisbury Steaks
In a medium mixing bowl, mix the ground beef, onions, egg, Worcestershire sauce, parsley, and pepper together. Divide into 8 equal oval shaped patties.
Heat a large frying skillet over medium high heat and cook each patty for about 4-5 minutes on each side.
Once cooked on both sides, remove from the plan and place on a side plate.
For the Mushroom Onion Gravy
Reduce heat to medium, add onions and garlic to the pan along with the steak drippings. Cook for 3-4 minutes. Stir in mushrooms and continue cooking for a few more minutes.
Sprinkle flour over the mushrooms and onions, stir and cook for another minute or so.
Next, add beef broth, Worcestershire sauce, salt and pepper. Stir for a few minutes and place the Salisbury steaks back into the pan and cover with the gravy mixture.
Cover the pan and cook for about 2-30 minutes gents stirring occasionally. The gravy will also ticket up as it cools so make sure not to cook too long or your gravy will be too thick. If that happens, just add a little more beef broth to thin out.
If the gravy is to thin mix 1 tsp corn starch with 1/8 cup water, then add to pan, stir and let simmer for a few more minutes.

Taco bake

- 1 pound 93/7 lean ground beef
- 1 bundle cilantro, chopped
- 1 cup grape tomatoes
- 1 medium spaghetti squash
- 1 can corn
- 1/2 cup yellow onion, diced
- 2 TBSP taco seasoning
- 1 TBSP olive oil
- 1 cup low fat cheese
Preheat your oven to 400 degrees. Place your spaghetti squash halves on a baking sheet, with insides facing up and seeds scooped out. Drizzle with olive oil and bake for approximately 40 minutes util the center is tender. Allow too cool.
While the squash is roasting, brown your ground meat in a large skillet over medium heat until it is full cooked. Once cooked, drain any grease out and add taco seasoning, tomatoes, corn and onion and cook for 2-3 minutes or until the veggies have softened slightly.
Once the squash is cooked and cooled slightly for handling, use a for and shred for noodle-like strands. Transfer the spaghetti squash to th skillet with everything else.
Stir all together and then transfer to a 9 x 13 baking dish. Top with cheese and chopped cilantro. Bake for 15 minutes or until the cheese has melted.

Cottage Cheese Hamburger Patties

- 1 1/2 pound 93/7 lean ground beef
- 1 each egg
- 1 cup 2% cottage cheese
- 1 tbsp seasoned salt
- 1/2 tsp Worcestershire sauce
Combine egg, cottage cheese, seasoned salt and Worcestershire sauce. Mix together well.
Shape into 8 patties about 34 inch thick.
Pan-broil in hot skillet over medium heat for 5-7 minutes.
Turn patties.
Pan-broil 4-5 minutes longer.
