Crockpot White Chicken Chili

This recipe is a family favorite.  It makes about 16 servings portioned at 1 cup each.

White Chicken Chili

Ingredients
  

  • 3 each boneless, skinless chicken breast
  • 2 cans white kidney beans
  • 2 cans navy beans
  • 1 can rotel I used the 14.5 ounce can
  • 1 can corn
  • 1 8 oz container great value light cream cheese
  • 1 small onion, diced
  • 1 package hidden valley ranching seasoning
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 TBSP chili powder

Instructions
 

  • Place the chicken in the crockpot with water and cook on slow for about 6 hours. After the cooking time is over, take the chicken breast out of the crockpot and shred.
  • Add the shredded chicken back into the crock pot.
  • Add the kidney beans and navy beans into the crockpot.
  • Pour the corn, undrained, into the crockpot.
  • Pour the rotel, undrained, into the crockpot.
  • Add all spices.
  • Place the cream cheese on top. Cover with lid and cook on low for another 2 hours.
  • Stir all together, occasionally, for 2 hours. Once done enjoy!
  • Makes 16 1 cup servings.

  • 5 ounces greek yogurt, plain
  • 1/2 cup parmesan cheese, grated
  • 1 tsp seasoning salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper

Instructions
 

  • Preheat oven to 375 degrees. Spray baking dish with non-stick cooking spray.
  • Combine yogurt, parmesan cheese and seasonings.
  • Spread mixture over chicken.
  • Bake for 45 minutes, or until chicken is cooked through and topping is browned.

  • 2-3 each boneless, skinless chicken breast
  • 6 TBSP Franks buffalo sauce
  • 2 TBSP sriracha sauce
  • 1/2 cup diced green onion
  • 1/2 cup diced celery
  • 1/2 cup monterrey jack cheese
  • 1/2 cup sour cream

Instructions
 

  • Boil chicken until full done and set aside too cool.
  • Once the chicken breast is cooled, shred using two forks. After all the chicken is shredded, finely dice it.
  • Please all the shredded chicken into a mixing bowl add diced celery, diced green onion and cheese. Mix well.
  • Add buffalo sauce, sriracha sauce and sour cream. Mix well.
  • Keep refrigerated until served.

  • 2.5 pounds boneless, skinless chicken breast
  • 1/2 cup water
  • 1 cup Franks buffalo wing sauce
  • 6 ounces blue cheese crumbles
  • 12 tbsp OPA blue cheese dressing
  • 1 package cole slaw mix
  • 12 each rice paper wraps

Instructions
 

  • Put chicken in crockpot with 1/2 cup water and buffalo sauce. Cook on high heat for 4-6 hours or until chicken is easily shredded with a fork. Once cooked add in cole slaw mix to soften. Stir until everything is mixed well and coated.
  • Once chicken is cooked, preheat oven to 400 degrees.
  • Lay rice paper wraps in water for a few seconds. Then lay on a clean work surface, top with 3 ounces shredded chicken and 1/2 ounce blue cheese crumbles and fold. To fold: Work quickly, you don’t want your wrapper to fall apart. When you’ve placed all of your ingredients in a nice little pile in the middle of the rice paper roll wrapper, it’s time to roll it shut! Note: Be careful not to overfill your spring roll wrapper because it will cause the rice paper to tear. Start by folding the top and bottom sections of the rice paper in over the mixture. Starting on the left-hand side, stretch the left side of the wrapper around the pile of ingredients, tucking and rolling until you can rest the wrapper just under the ingredients. Tuck the corners in and then continue to roll the rice paper roll all the way, making your roll as tight as possible without ripping the rice paper wrapper. That's it!
  • Repeat remaining rolls.
  • Please the rolls on a coated cookie sheet and bake for 12-15 minutes or until the rolls are beginning to turn a light brown. .
  • Let cool for 5 minutes then serve!

  • 2 pounds boneless, skinless chicken breast about 3 large chicken breasts
  • 1 can corn
  • 1 can rotel
  • 1 can white kidney beans
  • 1 can black beans
  • 1 can stewed tomatoes mexican style
  • 1 can pinto beans
  • 1 packet chicken taco seasoning
  • 1 packet hued valley ranching seasoning

Instructions
 

  • Set crockpot to low and place chicken breast in crockpot with 3 cups of water and cook for 5-6 hours.
  • When you can shred chicken with fork and drain all the water out.
  • Mix in all canned goods (do not drain juices), ranch and taco seasoning.
  • Cook on low for another 1-2 hours.
  • *Cut out corn for soft food phase
