Zesty Buffalo Chicken Salad

- 2-3 each boneless, skinless chicken breast
- 6 TBSP Franks buffalo sauce
- 2 TBSP sriracha sauce
- 1/2 cup diced green onion
- 1/2 cup diced celery
- 1/2 cup monterrey jack cheese
- 1/2 cup sour cream
Boil chicken until full done and set aside too cool.
Once the chicken breast is cooled, shred using two forks. After all the chicken is shredded, finely dice it.
Please all the shredded chicken into a mixing bowl add diced celery, diced green onion and cheese. Mix well.
Add buffalo sauce, sriracha sauce and sour cream. Mix well.
Keep refrigerated until served.

Buffalo Chicken Stuffed Sweet Potatoes

- 1 small sweet potato
- 4 ounces shredded, chicken breast
- 1 TBSP Franks buffalo sauce
- 2 TBSP OPA Ranch Dressing
*The chicken should already be cooked and shredded for this recipe.
Preheat oven to 400 degrees. Wash sweet potato and prick with a fork. Place on oven rack (or buy the microwavable sweet potatoes).
Let sweet potato bake. Remove when soft.
Heat chicken and Franks Buffalo sauce.
Place over sweet potato and top with OPA Ranch Dressing.

Buffalo Chicken Boats

- 2 each laughing cow cheese, mozzarella
- 1 tbsp Franks buffalo sauce
- 1 each english cucumber, pealed and seeded if you prefer celery, you can substitute.
Mix chicken, laughing cow cheese wedges and buffalo sauce in small bowl. Microwave for 1-2 minutes. Stir thoroughly.
Place mixture inside cucumber boat and slice to desired eating portions.

Buffalo Chicken Bites

- 1 pound boneless, skinless chicken breast
- 1/4-1/2 cup Franks buffalo sauce
- 2 cloves garlic
- 1 tsp olive oil
Pre-heat oven to 450 degrees.
Trim your chicken breast or tenderloins into 1 inch cubes and cut away any fat from the chicken.
In a bowl chicken, minced garlic and oil mixing until chicken is coated.
Add chicken to a 8x8 baking dish and bake uncovered for approximately 20 minutes or until chicken is cooked all the way through.
Once the chicken is cooked, place the cooked chicken in a sprat bowl, draining any excess juice and toss in wing sauce to your liking.
Serve with fresh carrots, celery, or fat free ranch dressing. I personally like Walden Farms, OPA or Bolthouse Farms for low calorie dressing.
