Stuffed Peppers

- 4 medium bell peppers
- 1 pound 93/7 lean ground turkey
- 1/2 pound Italian ground turkey
- 1 small onion, diced
- 1 1/2 cup cauliflower, riced
- 1 can tomato paste
- 1 can diced tomatoes with green chilies
- 2 tsp italian seasoning
- 1/2 tsp garlic seasoning
Preheat oven to 375 degrees.
Cut off tops of bell peppers. Remove seeds and membranes. Rinse bell peppers, if necessary, cut thin slice from the bottom of each peppers they stand upright. Set aside.
Brown ground turkey, Italian ground turkey and onion in large skillet on medium-heat. Drain fat. One cooked add in the cauliflower rice and cook for a 5 minutes.

Then add in the tomato paste, diced tomatoes, Italian seasoning and garlic powder; mix until well blended.
Stuff the peppers with turkey mixture.
Put foil on top and bake 30-45 minutes or until peppers are tender.
Sprinkle with cheese and bake for 5 more minutes or until cheese is melted.
For extra spice add in 1 TBSP chili powder

Cajun Marinated Chicken

- 1 TBSP sugar free ketchup
- 2 TBSP oil
- 1/4 tsp pepper
- 1 1/2 tsp tsp cajun seasoning
- 1 tsp garlic powder
- 1 tsp italian seasoning
- dash of salt
Preheat oven to 350 degrees.
Place chicken in a large self closing plastic bag in marinade.
Marinate of rum to 3 hours for stronger flavor.
Cook for 55 minutes.

Chicken Crust Pizza

- 1 pound ground chicken
- 1 cup mozzarella cheese, light
- 1 tsp italian seasoning
- Your favorite pizza toppings
Pre-heat oven to 400 degrees
Add the ground chicken, cheese and Italian seasoning to a bowl. Mix thoroughly with your hands.
Place the mixture on a piece of parchment paper and spread into a pizza shape about 1/2 inch thick.
Place the pizza crust and parchment paper on a rimmed baking sheet and bake for 20 minutes.
Take out and flip over, add your favorite topping then bake for another 10 minutes.
Remove from the oven and cool slightly. Slice and serve.
*Watch when you put your toppings on to keep it low fat.

Mediterranean Chicken

- 12 TBSP fat free feta
- 12 TBSP Italian tomatoes, diced
- italian seasoning
Preheat oven to 350 degrees.
Trim fat off chicken breast and slice in half long ways.
Season chicken with Italian seasoning.
Place chicken on baking sheet (use the rectangle bar from pampered chef) and bake for 30 minutes or until done.
Once cooked, place 2 TBSP italian diced tomatoes and 2 TBSP fat free feta on top of each one and cook 5 more minutes.

Baked Parmesan Pork Chops

- 2 TBSP Extra Virgin Olive Oil
- 1 tsp italian seasoning
- 8 thinly sliced Center Cut Loin Chops
- 1 cup Parmesan cheese
- salt and pepper to taste
Preheat oven to 400 degrees.
Spray cookie sheet with cooking spray.
In a bowl, mix mustard, oil, and Italian seasoning.
Salt and Pepper the pork chops to your liking.
Brush both sides of the pork chops with mixture.
Then , sprinkle both sides of pork chops with parmesan cheese.
Place pork chops of the baking sheet.
Bake about 15 minutes.
