Instructions
  1. Heat skillet to medium heat. In a small bowl, toss chicken, buffalo sauce, blue cheese, cheese, cilantro and salt and pepper to taste.
  2. Lightly grease pan with olive oil.
  3. Place tortilla on pan, top with chicken mixture and fold in half.
  4. Allow to cook for 2 minutes and flip for 2 minutes on the other side.
  5. Cut the quesadilla in half and serve.

  1. Heat oven to 350 degrees.
  2. Spray cooking sheet with spay oil, like pam or coconut oil
  3. Cut tortilla in triangles.
  4. Lay on cookie sheet and spritz top with spray oil and lightly salt.
  5. Bake 3-5 minutes on each side.
