Instructions
  1. Preheat oven to 350 degrees.
  2. Spray 9x11 casserole dish with nonstick spray.
  3. Heat pan to medium heat, add the spinach and wilt, about 2 minutes.
  4. Beat the eggs and egg whites with salt and pepper to taste. Add in the spinach and onion and mix evenly.
  5. Pour the mixture into the casserole dish and bake for about 45 minutes. Let cool for about 5 minutes before cutting into equal parts.
  6. **To add in more protein add in some chicken breakfast sausage.
