This is my favorite recipe when craving fettuccini!

Shrimp Fettuccini

  • 1 medium zucchini
  • 1 bag shrimp each serving is about 10 raw shrimp
  • 6 wedges laughing cow cheese wedges


  • Spiralize your zucchini into noodles using a spiralizer.
  • In a large sauté pan, heat over medium heat the laughing cow cheese wedges until melted.
  • Add the shrimp and cook until pink and opaque, 1-2 minutes on each side.
  • Lastly, place zucchini pan and cook, while stirring, for 3-4 minutes or until zucchini takes on a cooked pasta texture, sorta wilted and soft. Careful not to overcook.
